A scrambled egg is not complete without spinach.

I made a curried vegetable soup in the Instant Pot. The chopped spinach was tossed in at the end, after I released pressure. Then I set the lid back on for a couple of minutes, to let the spinach wilt. Perfection!

I love them quartered, then sauteed in olive oil, with lemon.

Bagels go with hummus, yes?

This little alien was on sale, so I couldn’t resist. I wouldn’t normally waste money on a unitasker, but it shuts automatically, so it will let me cook hard-boiled eggs while I’m in the shower. It also allegedly poaches eggs and makes omelets. And it’s really freaking cute!

This is what you do when you have eggs but no bread for toast. You make a pot of basmati rice (it’s not sticky), then fry it with spinach and green onions, then eat it with scrambled eggs. The leftovers are pretty good, too, so that’s going to be breakfast tomorrow.

(Please note that there are no dead people or dogs in this post. I’m not sure how that happened.)
